Description: A special Arabic sauce used on
vegetables, but especially used on Falafels.
Tahini Sauce #1 1 clove
garlic 1/2 teas. salt 1 cup tahini (ground sesami
seeds) 1/2 cup lemon juice water
Crush the garlic and
salt together in a mortar and pestle to a paste (or use a bowl
and the back of a spoon). Mix in the tahini and beat in the
lemon juice. Gradually mix in enough water to make the
mixture the consistency of thick cream. Adjust salt and
lemon to taste.
Tahini Sauce #2 1/2 cup
plain nonfat yogurt 2 tablespoons tahini (sesame seed
paste) 1 teaspoon lemon juice dash of red pepper 1 clove
garlic -- minced
Combine all ingredients in a bowl; stir with
a wire whisk until well-blended. Cover and
chill.
Tahini Sauce #3 1 cup tahini
(sesame seed paste) 1 teaspoon garlic 1/2 teaspoon salt 1/2
cup lemon juice 1/2 cup water 1/4 teaspoon cumin 1/2 cup
chopped parsley 1 1/4 cups drained
yogurt
